On Thursday, Oct. 22, SUNY Cortland will host its annual Campus Crunch Day, in which colleges and universities throughout New York state join in celebrating and supporting local farms.

All day long in Neubig Dining and The Bistro Off Broadway, students can enjoy an assortment of different menu selections from local growers.

“The food is going to be delicious,” said Jeffrey Scott, director of dining services for Cortland Auxiliary, which runs the fun and free annual event. “Our chefs and bakers enjoy working with themes and serving something special and unique for the students.”

Servings will include fresh McIntosh and Cortland apples from Long Point Orchard in Aurora, N.Y., as well as from Yonder Fruit Farms Inc. in Valatie, N.Y.

Due to the COVID-19 pandemic, the meals will be spread out at different stations and all food will be take out only.

The Bistro menu:

  • Twix caramel apple salad
  • Cheddar apple soup
  • Grilled peanut butter and apple sandwich
  • Ginger-maple spiced tofu and apple cubes
  • Apple pie pizza
  • Apple bourbon chicken gravy
  • Sautéed apples

Drinks & Desserts

  • Apple pie parfait
  • Caramel covered apples
  • Warm apple cider

 

Neubig Dining menu:

Available 7 a.m. to 10:30 a.m.

  • Apple waffles
  • Apple strudel sticks
  • Apple butter croissants

Available 11 a.m. until closing

  • Apple cranberry marinated grilled chicken
  • Apple cider roasted butternut squash
  • Apple cheddar bacon pizza
  • Apple and celeriac soup
  • Apple crisp with French vanilla ice cream

Beverage station

  • Hot and cold cider
  • Local New York gala and honey crisp apples
  • Apple sauce

 

“We want to be supportive to New York state agriculture and show some appreciation to that,” Scott said. “There are a number of colleges throughout the state that will be participating on that same day, so we want to stay involved.”

SUNY Cortland recognizes local farms because Cortland is in the heart of apple country with fresh food grown throughout the surrounding region. Campus Crunch Day is just one of the many ways Cortland Auxiliary is committed to sustainability.

New York state ranks second in the nation in apple production with an average of 25 million bushels of apples a year.
